Traditional Rajasthani Mutton Curry

Introduction

If you love authentic Indian flavors, then this Marwadi Mutton Curry will win your heart. Straight from the kitchens of Rajasthan, this dish is rich, spicy, and slow-cooked in mustard oil with fresh ginger-garlic paste, Mathania/Teja chilies, and a blend of aromatic spices.

Unlike regular mutton curry, this version is deeply rustic with smoky flavors, making it perfect for special family dinners or festive occasions.

Ingredients

  • 1 kg fresh mutton (chops + mixed pieces)
  • 7 medium onions (finely sliced)
  • 2-inch fresh ginger
  • 1 garlic bulb (make paste)
  • 6 green chilies (slit)
  • ½ cup mustard oil
  • Whole spices (bay leaf, black cardamom, cloves, cinnamon, red chili)
  • 2 Teja/Mathania red chilies
  • 2 tomatoes (cut in half)
  • 1 tsp spicy red chili powder
  • 1 tbsp Kashmiri red chili powder
  • ½ tsp turmeric powder
  • 2 tsp cumin powder
  • 2 tbsp coriander powder
  • Salt (to taste)
  • 8-10 cashews, 6-8 almonds, raisins (optional)
  • ½ tsp garam masala
  • ½ tsp dry ginger powder (sonth)
  • Nutmeg + mace (small pinch, grated)
  • 2 cups hot water

Cooking Method (Step-by-Step)

English:

  1. Heat mustard oil until smoking, then reduce flame. Add whole spices + Teja red chilies.
  2. Add slit green chilies and onions. Cook until translucent.
  3. Add ginger-garlic paste and sauté well.
  4. Add mutton + whole garlic cloves + salt. Cook until liquid releases and reduces.
  5. Add chili powders, turmeric, cumin, coriander. Cook until oil separates.
  6. Add tomatoes (halved), cook till soft, mash gently.
  7. Add dry fruits (optional).
  8. Pour in hot water, add garam masala, dry ginger, nutmeg, mace.
  9. Cover and cook on low flame 20–25 mins until mutton is tender.
  10. Serve hot with bajra roti, tandoori roti, or rice.
