Crispy Suji Gujiya Recipe Without Mawa (Holi Special)

If you’ve tried mawa gujiya and sugar-syrup gujiya before, today I’ll show you a unique gujiya recipe without mawa, yet so rich and creamy that you won’t even realize there’s no khoya in it. This recipe is simple, uses everyday ingredients, and is a perfect sweet for Holi celebrations.

Ingredients for the Dough:

  • 4 cups (500g) all-purpose flour (maida)
  • ½ cup ghee (for moyan)
  • 1 cup water (to knead stiff dough)

Ingredients for the Filling:

  • 1 cup semolina (suji/rava)
  • ½ cup ghee
  • ½ cup sugar
  • 1½ cups milk
  • 3 tbsp fresh milk cream (malai)
  • ¼ cup desiccated coconut (or fresh grated coconut)
  • 10-12 cashews
  • 10-12 almonds
  • 2 tbsp pistachios
  • 2 tbsp raisins
  • 5 green cardamoms (crushed)

Method:

Step 1: Prepare the Dough

  1. Mix flour and ghee well until it forms a crumbly texture.
  2. Gradually add water and knead into a stiff dough (not too soft).
  3. Cover and rest for 30 minutes.

Step 2: Prepare the Filling

  1. Heat 1 tbsp ghee, roast cashews, almonds, and pistachios until light golden (keep raisins aside). Crush once cool.
  2. In the same pan, roast coconut on low flame until fragrant. Set aside.
  3. Heat ½ cup ghee, add suji, and roast on low flame until golden brown.
  4. Add sugar and roast for 2 minutes (this step prevents sogginess).
  5. Add milk slowly, stir continuously until the mixture thickens.
  6. Add malai, crushed cardamom, roasted nuts, raisins, and coconut. Mix well.
  7. Cook until the stuffing turns dry and grainy like mawa. Let it cool.

Step 3: Shape the Gujiyas

  1. Divide the dough into equal portions, roll into small discs.
  2. Place 1-2 tbsp stuffing in the center.
  3. Fold into half-moon shape, seal edges with water, and trim excess. (You can use a gujiya mold for perfection).

Step 4: Fry the Gujiyas

  1. Heat oil/ghee on low flame.
  2. Fry gujiyas in batches on low heat until crisp and golden brown.
